The Ministry of Ayush is happy to present “Traditional Food Recipes from Ayush Systems”, a booklet containing information on traditional recipes from different parts of India, compiled in this list considering their nutritional value.
Food recipes are unique to particular regions and cultures. Those indigenous concepts about food are invariably inter-woven with basic principles of health and are often overlooked. Contemporary modern food science describes food in terms of its nutritional values of vitamins, minerals, energy in terms of balanced food while traditional systems like Ayurveda dietetics place greater emphasis on processing of food, its compatibility and rules of food consumption.
There is a lot of similarity between Ayush dietetics and traditional foods in India. Intake of wholesome food and its proper digestion play a pivotal role in growth, development and nourishment. Benefits of food can be achieved only when taken judiciously, customized to the individual and according to the health condition, status of digestion, climate, habitat and habituation of a person.
India has a rich tradition of diverse food practices in different parts of the Country. Most of us are unaware of the treasure trove of culinary delights that has been passed down to us by our own ancestors. This compilation of recipes is a broad exploration into traditional systems of eating for health and nourishment, with added interpretation to place it in the context of our own time. It contains indicative general guidelines and therefore the users of the book may make necessary modifications in the recipes as per their own choice and availability of the ingredients in their region.
